
Try this Bajan treat with cheese or anything you wish.
Recipe
4 lbs flour (white or wheat)
6 ozs sugar (any colour)
1 tbsp salt
1 + 1/2 tbsp yeast or 1+ 1/2 packs
2 tbsp cinnamon
1 tbsp spice(optional)
3 ozs margarine/ butter/ shortening/mixture of all
Raisins (any amount, soaked in warm water then drained)
40 ozs water (1.25 litres/ 2+ 1/2 pints)
Vanilla essence(to taste)
2 tbsp butter extra to mix with raisins.
Method
Place all dried ingredients together in large bowl, mix water and essence together.
Make a well in the centre of flour mix, then add butter and water. Mix thoroughly.
Turn out on a floured surface and knead until very, very smooth.
Divide into 32 balls (4ozs each in weight) using minimal extra flour.
Drop them into 8 greased or sprayed loaf pan( 4 balls each) and allow to rise in a warm place, (oven with pilot flame on is perfect).
Should be 20+ minutes until risen about half inch above the pan.
Bake at 200C for around 16-20 minutes until loaves are golden and firm to the touch.
Bread is done when a tap on the underside produces a hollow sound. Enjoy and you’re welcome.
