Pudding and souse is a traditional dish found in Barbados throughout every community. It's a dish made mainly on Saturday mornings.
The souse is made from various parts of the pig, and the pudding is made with seasoned sweet potatoes. Combine the two and you have a beautiful combination of pudding and souse.
Try it once and you will fall in love.
You will need for Pudding
4 cups sweet potatoes
1 lg onion
1/4 tsp fresh pepper
1 tsp salt
1 cup sugar
Peel and grate potatoes add all ingredients together, mix well and taste, pour all mixed ingredients into greased baking dish place in oven at 350 degrees bake until inside is cooked.
What you'll need for Souse
4 lbs pork
All purpose seasoning
Wash pork with lemon/lime and salt set aside for 5 mins put pork to boiling water with onion, thyme, garlic, and all purpose seasoning while pork is cooking chop up cucumber, parsley, onion, place in bowl, add lemon juice, and salt to taste.
Remove boiled tender pork from stove and rinse under cold water, add little salt and lemon, mix well and set aside to cool.
Once cool add pork to your mixed cucumber pickle and set aside to incorporate flavors. Serve your black pudding and Souse together add a piece of breadfruit and wallah! enjoy.
