Prickle Chicken Foot Souse

A popular food in Barbados that would make your taste buds tingle with delight.

Chicken feet taste great,  they consist of bones, skin, and tendons, but no muscles. They are rich with protein, calcium, collagen, and cartilage that are easily absorbed by the body.

Anything, except the bones and nails, is edible with chicken feet.

Chicken feet taste just like chicken, with whatever added flavours they might have been cooked with.


3 lbs of chicken foot clean
25 ml spoon (1,5 tbsp.) lime juice
1 onion, peeled and chopped
salt and pepper to taste
2 large cucumbers grated


Clean n cut out the nails of the toes n and top tush off the foot.


Put foot in a saucepan with enough water to cover.

Simmer, covered, for about 30 minutes, or until foot is tender.

Meanwhile, mix lime juice with onion and salt and pepper and cucumber. Drain foot wash n Place into a lrg bowl and spoon pickle over.

Serve hot or cold goes well with breadfruit.

Serves 4-6.
