Don’t let all those mangoes spoil, fruits that sit on the counter ripen very quickly, try this nice recipe, makes a great snack during family time.
2 sticks butter
1 1/2 cups sugar
1 cup mango puree
1/2 teaspoon baking soda
2 cups all-purpose flour
4 large eggs
2 teaspoon vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 2 loaf pans
In a large mixing bowl, cream the butter and sugar together.
Add the mango puree and mix until incorporated.
Sift the baking soda and flour together.
Add to the creamed mixture alternating with eggs, beating in each egg 1 at a time.
Pour the mixture into the prepared pans.
Bake for 40 minutes to 1 hour or until toothpick inserted into the center of the cake comes out clean.
