
Use your guava while in season.
Please don’t float the pans.
Recipe
3 cups all-purpose flour
2 tsp baking powder
2 tsp cinnamon
2 cups butter softened
1 1/2 cups brown sugar
6 eggs
2 tsp vanilla extract
1 tsp coconut extract
2 cups. Finely chopped guava seeds removed or puree
Method
Preheat the oven to 350 degrees
In a bowl, whisk together flour, baking powder, and cinnamon. Set aside
In a large bowl, cream together butter and brown sugar until fluffy Add eggs, one at a time, mixing well between each addition Mix in extracts
Turn the mixer to low and gradually add in the flour mixture until well-combined Fold in chopped guava
Pour mixture into two greased loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 15 minutes. Invert onto a wire rack and cool completely
