Good Old Time Saltfish Rice

One of my many quick and simple “cook up” of saltfish and rice. A perfect dinner option and quick using your Instant Pot. This saltfish and rice cook-up is popular in Barbados.

In Barbados “Cook-up” just means that all the food is cooked together and makes a one pot. Most times it includes rice and something. Rice and okra cook-up. Rice and peas.

Bajans love Saltfish (or salted fish), it’s codfish that has been salted for preservation. This was once called poor man food.

I’m a frequent user and use it to make fish cakes when I can.

Recipe

1 large tomato chopped
1 bunch thyme
2 springs scallion finely chopped
3 cloves garlic finely chopped or grated
8-oz Salted codfish
2 Tbsp Cooking oil
8 oz yellow cooking butter
1 med Onion chopped or grated
1/2 Teaspoon Tumeric
1 teaspoon paprika
1/2 each Red and Green bell pepper, chopped
2 cups carrots, pumpkin or butternut squash, cut in small chunks
2 cups of water
1 tsp Hot pepper sauce or half scotch bonnet pepper finely seeds removed and chopped
1 Tbsp Ketchup
Black pepper
2 package Maggie fish seasoning
2 cups Rice

The Best Ways To Cook Rice

Method

Soak salted cod for 4 hours in cold water to remove some of the salt.

Drain and break or cut into small pieces; set aside.

Heat oil in a saucepan.

Add onions, garlic, peppers, and tomato to the pan and saute for 5 to 8 mins.

Add pumpkin, carrots or squash, paprika and Tumeric stir for 5 mins.

Add hot water, salted cod, hot pepper sauce, and ketchup; stir and season to taste with black pepper and Maggie.

Add rice and stir gently; bring everything to a boil then lower heat to a minimum.

Add butter, thyme, and scallion cover let steam until rice is cooked.

A bit more water may be needed depending on the rice used.

When rice is cooked fluff with a fork and serve
