When it comes to home made jams there really is nothing better, try this recipe today.
3 1/2 lbs ripe carambola fruit
3 cups of sugar
1 1/2 cups water
1 1/2 tbsp finely grated ginger
Wash fruit and cut into small pieces remove seeds and place fruit and water in a pot and slowly bring to the boil while stirring.
Boil for 15 minutes or until fruit is cooked.
Remove from heat and strain through a fine sieve.
Rub the fruit through the sieve and pour back into the pot on low heat.
Add the sugar and ginger and simmer after the sugar has dissolved for another 30 minutes. Skim off scum as it rises.
Fill hot, sterilized jars, seal, and store in a cool place.
