Breadfruit Saltfish Rolls

Add some flavour to your menu and try this delicious combo.


2 lb salted fish or salt cod
1 ripe breadfruit peeled wash and cooked
2 cups breadcrumbs
1 cup all-purpose flour
1 cup minced onions
1/4 cup finely chopped sweet pepper
1/2 tsp black pepper
1 1/2 tsp paprika
4 large eggs
2 tbsp green seasoning
1 Tsp fish powder seasoning
1 tsp all-purpose seasoning
chives and thyme
Canola oil or vegetable oil for frying


Soak fish (salted cod) for at least 30 mins.

Boil fish for 15 mins, then rinse for remove extra salt.

In a food processor or mixing bowl, blend together breadfruit, breadcrumbs,1 tbsp green seasoning and form a firm dough. roll dough into small balls place in a bowl cover and set aside.

In a small pan or skillet on add two tablespoons of oil and saute the fish and all other ingredients except flour, eggs and oil. Sautee for 10 minutes and remove from heat and place in a bowl set aside to cool.

Put oil in the pan or skillet for frying.

On a clean floured surface roll out the balls and place the saltfish mixture and roll up. Press in edges to seal Beat eggs in a small bowl for 5mins. dip rolls into egg mixture.

Dust in flour then fry until golden brown. Drain on paper towels and serve warm.
