Baked Stuffed Chicken Bajan Style

Every country has it’s it own flavour and this baked stuffed chicken is done Bajan style.

Recipe

Stuffing

3 packs of Eclipse biscuits
1 tsp thyme
1.5 tsp chopped chive
2 pods of garlic
1 stalk of celery
2 diced onions
1 tsp marjoram
2 sweet peppers
scotch bonnet pepper
salt and pepper to taste

Chicken

1 large onion chopped
1 Scotch bonnet pepper seeded and chopped
3 to 4 cloves garlic
2 tablespoons butter, softened
1 tablespoon fresh thyme leaves
1 tablespoon minced fresh parsley
1/4 cup lime juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Or just season the chicken with good old Bajan seasoning

Method

Stuffing

Puree all ingredients in a blender and place aside.

Soak biscuits in a bowl of water allowing them to soak up the liquid.

Add puree ingredients to the mixture mixing slowly. Continue to stir the mixture until it has reached the desired texture.

Place mixture aside we will use this to stuff chicken or turkey before baking for a delicious Bajan meal.

Chicken

In a food processor fitted with a steel blade, place all of the ingredients except the chicken, lime, butter, and salt. Process for 30 seconds, forming a paste. Scrape the sides at least once during the processing.

Place the chicken in a bowl, Marinate chicken in lime and salt for 25 to 30 mins place in the refrigerator

Preheat the oven to 375 degrees F.

Remove chicken from refrigerator and wash off lime and salt.

Make some small slices in the chicken one in both breasts,one in each leg and tight and stuff with the blended seasoning.

Place the chicken in a baking dish and stuff with the stuffing to keep tie stuffing in you can use some string to tie the legs together or use a screwer.

Coat with the melted butter and add water or chicken stock to dish enough to cover the bottom of the dish.

Bake for 45 minutes, until the meat, pulls easily from the bone. Turn the chicken after 20 minutes and baste with the pan juices to keep moist.
