Try our delicious Barbados recipe for making sugar cake, it’s a traditional Barbadian treat.
1 package grated coconut( approx 3 cups)
4 cups brown sugar
1 tsp essence
2 large pieces of ginger grated can use more or less to your taste. Ginger nowadays is not as strong as it used to be)
3/4 bay leaves.
Place the ingredients except for the coconut into the saucepan and allow to boil until sugar is completely melted and the liquid starts to look syrupy.
At this point you can remove the bay leaves from the mixture.
Add the coconut and turn the stove to medium heat, stirring frequently.
Let mixture cook until all of the water is dried out and it is coming away from the sides of the saucepan. Place some wax paper on a cookie sheet and sprinkle it with water.
Place spoonfuls of the mixture on the cookie sheet and allow to cool.
