In this recipe, I will show you how to make Nut Bread from scratch. A favourite snack in Barbados for many.

The Very Best Bajan Nut Bread – CRAZY good! Butter, sugar, eggs, flour, baking soda – SO easy to make. Tastes amazing. Great for breakfast or an afternoon snack.

Please mix by hand, a hand mixer will affect the texture.

Recipe

1 cups white sugar
4 eggs
1/2 cup butter melted
2 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon ground cinnamon
1-1/2 cups low fat
1 cup chopped peanuts to any nuts of your choice

Method

Preheat the oven to 350 degrees F (175 degrees C). Grease two 9×5 inch loaf pans.

In a large bowl, stir together the sugar, eggs, melted butter, and vanilla until smooth using a wooden spoon.

Combine the flour, baking soda, salt, nutmeg, and cinnamon; stir into the sugar mixture alternately with the milk just until mixed.

Stir in the nuts. Divide the batter evenly between the two pans.

Bake for 55 minutes in the preheated oven, until a toothpick inserted into the crown, comes out clean.

Allow the bread to cool for about 10 minutes before removing from the pans, and wrap in aluminum foil.
