Bajan Jamun Sweet Bread

If you going to add raisins n cherries to this recipe, please blend, or you will override the Jamun flavor.


4 cups all-purpose flour
3 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
2 sticks (227g) butter softened
2 cups brown sugar
6 eggs
2 tsp vanilla extract
2 tsp coconut extract
3 cups wash and deseeded chopped ripe Jamun grapes


Preheat the oven to 350 degrees

In a medium bowl, mix together flour, baking powder, and cinnamon.

Set aside

In a large bowl, cream together butter and brown sugar until fluffy Add eggs, one at a time, mixing well between each addition Mix in extracts

Turn the mixer to low and gradually add in the flour mixture until well combined

Fold in the chopped grapes and combined well. Pour mixture into greased loaf pan and bake for45 – 50 minutes or until a toothpick inserted into the center comes out clean.

Cool in the pan for 15 minutes. Invert onto a wire rack and cool completely
