Bajan Jamun Pound Cake

For those who don’t know what is Jamun grapes, I provided an image for you, your cake only remains white is if you chopped up the grapes. You can find these trees about All Souls Church in St Andrews or Queen Elizabeth Hospital.


2 sticks butter
1 1/2 cups sugar
1 cup Jamun puree
1/2 teaspoon baking soda
2 cups all-purpose flour
5 large eggs
2 teaspoon vanilla extract


Preheat oven to 350 degrees F. Grease and flour 2 loaf pans

In a large mixing bowl, cream the butter and sugar together.

Add the Jamun puree and mix until incorporated. Sift the baking soda and flour together.

Add to the creamed mixture alternating with eggs, beating in each egg 1 at a time. Add vanilla.

Pour the mixture into the prepared pans. Bake for 40 minutes to 1 hour or until the toothpick inserted into the center of the cake comes out clean.
