Bajan Ole Time Stew, Mamas stew food ain’t stew food without dumplings any sauce u can serve.


1 lb salt meat (tails, strips, stout, ears or salted beef
1/2 of breadfruit ripe or half-ripe peeled and sliced
1 small yam peeled and cut in size desired
1 medium sweet potato cut to size desired
2 large English potatoes cut in four
2 lbs eddoe or dasheen cut to size desired
2 lbs pumpkin cut to size
1 hand of green banana
salt to taste
2 tsp cooking butter


2 cups flour
1 cup cornmeal
1/2 tsp salt
1 tsp nutmeg or spice
1 tbsp mixed essence or vanilla
1 tsp baking powder

Salt Fish Gravy

1/2 pound salt fish (salt boil out, bones remove and strip in strips
1/2 onion diced
2 cloves garlic chopped
1 medium tomato chopped
1 sweet pepper chopped
1 scotch bonnet pepper chopped
2 tsp Bajan green seasoning
1 tbsp cooking butter for sauteing
2 tablespoons ketchup


Wash and clean salt meat and place in a large pot put on the stove with 2 cups of water on high heat let boil for 25 mins and drain of water.

Return to the stove with 2 cups of water and salt let cook another 15 mins. now add your breadfruit, yam, sweet potatoes, and English potatoes and butter, you may need to add more water at this point.

Let cook for about 15 mins before adding Pumpkin, eddoes, and the green bananas reason is that these take less time to cook.

cover pot and let cook a further 10 mins before adding your dumplings cook for a further 10 mins lower heat in order to steam dumplings make sure not to allow to burn as dumpling tends to suck up the if you need to add more water do it now.

Test your dumpling if done turn off the stove and drain water off food and serve hot with salt fish graying or gravy of your choice.


In a large bowl, sift the flour, cornmeal, sugar, salt, nutmeg, baking powder and essence.

Add the water a little at a time, while using your hand to mix the cornmeal and flour into dough.

Knead the dough for one minute. If the dough is sticky, sift a small amount of flour on it and knead for a few more seconds.

For best eating dumplings, cover the dough and allow it to rest for 15 minutes before cooking it.

Salt Fish Gravy

Soak or boil saltfish to remove most of the salt, drain.

Cut up the onions, tomato, garlic, sweet peppers and scotch bonnet (optional) and saute in the butter in a frying pan.

Add green seasoning. Remove and place in a dish. in the same frying pan add and saute salt fish.

Add back the mixture and add ketchup with a little water and cook for 2-3 minutes.
