This jam is commonly eaten for breakfast but feel free to indulge anytime of the day.
1 cup very ripe banana or very ripe plantain
1 cup of water
4 cups mash or puree banana or plantain
1 finger ginger minced
3 cups of sugar
Quash bananas with a potato masher. To every 4 cups of mashed bananas and ginger add 3 cups raw sugar, some vanilla flavoring, and 1 cup of water.
Simmer gently stirring occasionally, until mixture is a dark brown color, and of a thick jam consistency. Pour in clean jars cool seal tightly and Store in refrigerator. Bajan
