I love Baileys Ice Cream. It has many uses in both cooking and desserts, like simply topping some vanilla ice cream with it, or adding it to my breakfast pancakes or other baked goods for that Irish cream flavor.

I’m of the opinion that ice cream is best when it features unique flavors. In Barbados there is no shortage of fruits and wines, so try different things as you master this recipe.
1 quart half−and−half
1 cup granulated sugar
1/2 cup brown sugar
1/4 cup Bailey’s Irish Cream Liqueur
3 eggs, beaten
Enough milk to bring to 1/2 gallon
Blend ingredients together. Freeze in ice cream freezer according to manufacturer’s instructions.
